Class 1: Chocolate talk:
What is tempered chocolate?

Sunday, June 9, 2pm - 5pm
Cost: $150

Tempering chocolate has been in existence for over 3,00 years. The technique has been perfected over the years by melting chocolate to a specific temperature while agitating the sweet mixture. The result is a smooth, glossy finish that when cooled, should make a clean snap. In this class, you will learn the basic techniques of tempering and making chocolate Rice Paddies, dipping fruits onto transfer sheets. Each will be wrapped up in decorative packaging that you can give as gifts. During the break, tea and snacks will be served.

Class 2: Chocolate talk: What does cacao percentage really mean?

Sunday, June 16, 2pm - 5pm
Cost: $150

Chocolate truffles began in France right around the twentieth century. This delicious tradition has been passed down through generations. In this class, you will taste various bittersweet chocolates and learn the techniques to make classic French style truffles and classic French mendiants. While they cool, tea and snacks will be served. The class will conclude with packing the truffles in delightful decorative packaging that you can proudly share with family, friends, and coworkers. Or you can just keep them for yourself!

Class 3: Chocolate talk:
What is white chocolate?

Sunday, June 23, 2pm - 5pm
Cost: $150

White chocolate was invented in 1875 by Swiss chocolatier Daniel Peter and is different from regular chocolate because it does not contain cocoa nibs. Instead, white chocolate gets its unique taste from the cocoa butter of the cocoa bean. In this class, you will taste various flavored white chocolates, learn how to make chocolate filling to pipe into chocolate shells, and make chocolate lollies onto transfer sheets. While your creations cool, tea and snacks will be served. The class ends with packaging your chocolates in a delightful container that you can be proud of.

Class 4: Chocolate talk:
To be determined

Saturday, June 29, 11am - 2pm
Cost: $150

The Chocolate talk is still being developed but is sure to be informative and insightful. The class will give you skills, tip and techniques on how to caramelize nuts, hand pan chocolate and cast chocolate cups. Tea and snacks will be served while your creations cool and you will package your creations to complete the presentation.
